After harvest, the grapes are fermented, partially in stainless steel (34%) and partially in oak barrels. The Chenin Blanc Wild Ferment is then aged for another seven months on its own lees. The result is truly astonishing, placing this white wine rightfully among the finest Stellenbosch wines.
