The bunches are pressed whole and fermented. The wine then matures for nine months "sur lie" (on its own yeast) in large oak barrels, 30% of which are new. This new oak releases a wealth of flavor, giving Delheim Chardonnay Sur Lie a delightfully sultry character.
Because this Delheim white wine is aged on its own lees, it has a wonderful depth. You'll immediately discover this in the aroma, which is lush and aromatic. You'll smell citrus, but also tropical fruits like pineapple and a hint of melon. And don't forget the stone fruit; apricots and peaches add a pleasant note to the nose.
