Vinification and aging

For La Montagne, vinification focuses on keeping the juice white and enhancing the natural power of Pinot Noir.

Harvest & Selection: During harvest, extra care is taken to ensure that the skins of the Pinot Noir grapes do not color the juice. This keeps this Blanc de Noirs crystal clear, despite the use of black grapes.

Reserve wines: The cuvée contains 20% reserve wines. These add extra roundness, continuity, and depth to the blend.

Aging: The Champagne ages for 3 years on its lees. This aging on fine yeast cells provides a creamier mousse, more texture, and subtle notes of brioche and pastry.

Dosage: With a dosage of 6 g/l, La Montagne remains dry and fresh, while retaining enough roundness to beautifully support the ripe Pinot Noir fruit.

Champagne Boizel was founded in Épernay in 1834 by Auguste Boizel and Julie Martin. Today, the house is led by Florent and Lionel Roques-Boizel, the 6th generation of the family. Within the collection, La Montagne clearly shows the terroir-driven side of Boizel: a Champagne that is not about a classic house blend, but about the expression of Pinot Noir from the Montagne de Reims.
