AIX Provence Rosé 2025 represents the pure, modern interpretation of rosé from Provence and has become one of the most recognizable names in its category. The wine is made at Domaine de la Grande Séouve, where everything revolves around precision, scale, and consistency without losing the character of its origin. What sets this rosé apart is the combination of altitude, cool nights, and strictly controlled vinification, which keeps the style clear and pure, even in a warm year like 2025.
The grapes come from France, from Provence, within the Coteaux d’Aix-en-Provence appellation. The vineyards are located on a plateau at an altitude of approximately 400 meters, an exceptional location for Provence. Because of this altitude, more than three hundred sunny days per year, and distinct temperature fluctuations between day and night, the grapes ripen evenly and retain their freshness. The estate covers about 75 hectares of contiguous vineyards, which makes it possible to work entirely with our own fruit and to precisely manage the AIX style year after year.
Vinification is focused on purity and freshness. Approximately 30% of the wine is made via rosé de saignée, where short skin contact provides extra structure and aromatic intensity. The remaining 70% is pressed directly to keep the wine light and refined. Fermentation takes place at controlled temperatures between 14 °C and 16 °C in stainless steel tanks. There is no use of oak, ensuring that the fruit and fresh style remain the central focus.
