The grapes grow peacefully and are given time to develop, as the winemaker removes many bunches. This allows the remaining bunches to become fuller and more powerful. And after being harvested by hand, this Grillo simply matures in steel vats. The juice is so incredibly good, the winemaker explains, "there's no need to touch anything else."
