Summum Wines utilizes a variety of grapes in the Languedoc region to create wines that suit the modern wine lover's tastes. You get distinctive grape character, clean vinification, and, where appropriate, a refined oak note. A quick question: are these primarily "house wines" or also wines with provenance? They are modern, accessible cuvées with clear provenance references, from Pays d'Oc to AOP Limoux, so that style and terroir elements converge in the glass.

Region and vineyards

Between Narbonne and Limoux, you'll find sun, wind, and elevation changes that ensure ripe fruit while retaining its freshness. Soils vary from chalky and clay to stony plateaus, ideal for choosing the right plot for each grape variety. For fragrant varieties like Viognier, Summum seeks cooler, airy locations; for Cabernet and Syrah, warmer, well-drained soils; and for Le Vin Idéal in Limoux, clay-limestone and higher-elevation plots play a role in the tight, precise style.

Grape and style

The portfolio covers local and international: Syrah, Mourvèdre, Grenache, Merlot, Pinot Noir, Cabernet Sauvignon, Chardonnay and Viognier.
• Big Fat Series: Big Fat Buttery Chardonnay is full-bodied and creamy with a bold, buttery signature; Big Fat Spicy Cabernet Sauvignon is dark and spicy, with ripe fruit and a peppery kick.
• Sainte-Anne Barriques: Chardonnay, Viognier Réserve, Pinot Noir and Merlot with subtle wood aging, intended to support fresh fruit without overwhelming it.
• Le Vin Idéal Chardonnay de Limoux (AOP Limoux): hand-picked fruit, fermentation and maturation in French oak with bâtonnage for layering and length, while retaining the fresh Limoux backbone.

Aging periods are typically 2–5 years for most cuvées; Limoux Chardonnay and other oak-aged Chardonnays can often develop slightly longer thanks to barrel ageing and tighter acidity.
