To combine his two great loves: Champagne and his wife, he decided to establish Schlumberger in Vienna in 1842. He created exquisite sparkling wines in the impressive cellars beneath the Austrian capital, using the same method as Champagne: the Methode Traditionelle. What was remarkable was that native grape varieties played a significant role in Schlumberger's sparkling wines. For example, he managed to create an excellent sparkling wine from the Austrian Gruner Veltliner, which pairs beautifully with asparagus: the Schlumberger Gruner Veltliner.
