Vinification and aging

- Fermentation: Alcoholic fermentation lasts 10 days and takes place in oak barrels. This gives the wine extra breadth and a beautifully integrated touch of oak from the start.
- Aging / Oak aging: The wine then ages for 12 months on its lees, with 25% new oak barrels and the rest being 1 or 2-year-old barrels. During the first 6 months, bâtonnage is applied twice a month, which provides extra richness, texture, and complexity.

Château de Meursault is one of the most famous estates in the Côte de Beaune and currently works with 67 hectares, divided over more than 100 plots, including 6 Grands Crus and 20 Premiers Crus. The estate carries a history of almost 1000 years, underwent a major restoration in 1973 under André Boisseaux, and came into the hands of the Halley family at the end of 2012, who further focused on the expression of the great Burgundian terroirs. Precisely this combination of history, scale, and precision gives this Savigny-Lès-Beaune Blanc extra weight.
