Château Cavalier Cuvée Grand Cavalier is a gastronomic Provence rosé from Vidauban, in the Var region. The wine comes from Château Cavalier, a 132-hectare estate at the foot of the Massif des Maures, and combines a light lychee-pink color with citrus, red fruit, spice, floral notes, and a fresh mineral finish.
Grand Cavalier comes from Côtes de Provence, in the interior of Provence.
Location / Origin: Château Cavalier is located in Vidauban, between Aix-en-Provence and Nice. The estate is surrounded by forest and lies at the foot of the Massif des Maures.
Vineyard: The estate consists of 132 contiguous hectares of vineyard. This scale makes it possible to manage different plots separately and select them specifically for the Grand Cavalier cuvée.
Soil: The soils consist of sand and silt on sandstone, in addition to clay loam. This combination gives the rosé both freshness and structure.
Climate & Influences: In this part of Provence, summers are hot and dry, but cool nights and morning mist help to retain freshness in the grapes.
Vineyard management: Château Cavalier is Terra Vitis certified and practices sustainable viticulture. The estate uses methods such as eco-grazing with sheep to manage the soil naturally.
Vinification is focused on freshness, aromatic precision, and a refined gastronomic rosé style.
Harvest & Selection: The grapes are harvested at night. This better preserves the freshness, delicate aromas, and light color of the rosé.
Skin contact: Grenache undergoes a short skin maceration of 4–8 hours. This provides extra fruit, color, and structure without losing the refined Provence style.
Lees contact: Syrah and Grenache remain on the lees for 15 days. This adds texture, softness, and depth to the wine.
Aging: The wine ages for 2–3 months in stainless steel tanks on fine lees. As a result, Grand Cavalier remains fresh and pure, with added roundness on the palate.
Alcohol percentage: At 13% alcohol, this rosé remains elegant and drinkable, but with enough power for the dinner table.
Grand Cavalier is a blend of southern grape varieties, supplemented with Cabernet Sauvignon for extra structure.

Cabernet Sauvignon and Mourvèdre – Côtes de Provence: Cabernet Sauvignon and Mourvèdre provide extra power, red fruit, spice, and a gastronomic structure.
