An exceptionally cool growing season influenced by the Humboldt Current, resulting in daytime temperatures below 26 degrees and a cool mist. Grapes were harvested by hand at perfect ripeness.
This Cool Coast Sauvignon Blanc from Casa Silva winery is the first wine ever grown in the cool coastal region of Colchagua Valley. It's a prime example of how wines from Chile's cooler climates can truly express themselves. The Sauvignon Blanc vines for this Casa Silva Cool Coast are practically rooted in the ocean. And that location creates a special and unique climate—a climate where this Sauvignon Blanc matures exceptionally well.

Exceptionally cool climate for Sauvignon Blanc

The vineyards are located in the hills of Paredones, 8 kilometers from the ocean, and are the first vineyards in the Cool Coast region of Colchagua Valley. The temperature range is enormous, strongly influenced by the Humboldt Current, which creates a cool, dense fog during the summer months. As a result, daytime temperatures almost never exceed 26 degrees Celsius. This is exceptional in Chile. The Sauvignon Blanc grape produces the best wines under these conditions.

Completely hand-harvested for this Casa Silva Cool Coast Sauvignon Blanc

Harvesting is a precise job because it must be done at the right time. The grapes are harvested entirely by hand at peak ripeness. Grape by grape is assessed for bottling, allowing for the pure, unadulterated taste of Sauvignon Blanc. Upon arrival at the winery, the grapes are immediately cooled to 5°C. The bunches are then pressed whole, after which the juice is immediately separated from the must. Alcoholic fermentation then follows at 13°C for 24 days. No oak aging takes place; 100% of the wine is aged in stainless steel tanks. The aroma offers notes of freshly mown grass, lime zest, fresh green apples, and a hint of melon. This white wine lingers and will leave you wanting more. The palate clearly reflects the ocean, with a lovely saltiness, hints of samphire, green asparagus, and minerals. The fresh breeze creates a pure and stylish white wine with fruity notes of pineapple, green apple, and pear. On the back of the palate, this Casa Silva Cool Coast Sauvignon Blanc reveals hints of melon, a touch of boxwood, and artichoke.
