Mount Mary Vineyard, founded in 1971 by John and Marli Middleton, is a family-owned winery located in the heart of the Yarra Valley, Victoria. As one of the pioneers in the revival of this wine region, the estate is known for its dedication to quality and traditional winemaking methods. With 40 hectares of vineyards and 18 varietals planted, Mount Mary remains a leading producer of premium wines in Australia.
Mount Mary's vineyards benefit from a unique microclimate with cool temperatures and diverse soil types, ideal for growing Chardonnay. The north-facing slopes provide optimal sun exposure, while the clay and loam soils contribute to the wine's minerality and complexity.
After careful hand-harvesting, the grapes are gently pressed. Fermentation takes place in French oak barriques, 30% of which are new, to add subtle woody notes without overpowering the fruit. The wine then matures for 11 months on its fine lees, which contributes to the wine's texture and depth.
Serve this wine at a temperature of 10-12°C. The Mount Mary Chardonnay is a versatile accompaniment to dishes such as grilled fish, shellfish, poultry in creamy sauces, and soft cheeses. Its freshness and complexity also make it an excellent aperitif.
