The area around the Pyrenees ensures clear differences between day and night temperatures.
- Location / origin: Somontano is located at the foot of the Pyrenees in Aragon, in northern Spain.
- Climate & influences: The region has a Mediterranean continental climate. The cooling during summer nights supports gradual ripening and helps preserve the freshness of the grapes.
- Soil: Somontano has many limestone-rich, stony soils, alongside sandy loam and localized gypsum. Within Enate's vineyards, the soil composition varies by zone.
With the 2025 vintage, the preservation of aromas begins during the harvest.
- Harvest & skin contact: The grapes are harvested at night. In the pneumatic press, the juice remains in contact with the skins for 5 hours to release aromatic compounds.
- Fermentation: After settling for 48 hours at 10 °C, the clear juice is fermented with selected yeasts in stainless steel tanks at 16 °C. This controlled, cool fermentation supports the fruity style.
- Finishing: After fermentation, the wine is clarified and cold stabilized to remove excess tartrate crystals.
A single grape variety gives this wine its broad flavor and expressive fruit.
- 100% Chardonnay – Somontano: Brings apple, ripe peach, and exotic fruit notes together with a round mouthfeel and refreshing acidity.
