The Muscat grape is one of the oldest grape varieties in the world. It's grown in all wine-producing countries. However, it thrives in warmer climates. Wines made from this grape can vary greatly in aroma and flavor. Muscat de Rivesaltes is a "Vin Doux Naturel," meaning that the fermentation of the wine with alcohol is stopped before all the sugars have been converted into alcohol. This allows the wine to retain its natural residual sugars, giving it its rich sweetness, making it ideal as a dessert wine.
Domaine Cazes is one of the best Muscat wineries in the Rivesaltes region. With its progressive winemaking methods, this family business has been at the forefront for years. They maintain their traditions, but there is always room for innovation and improvement. Domaine Cazes has been producing entirely organically since 1997, later adopting biodynamic methods. Since the 2003 vintage, all their wines have been Ecocert-certified.
The grapes are vinified traditionally. After harvest, the grapes are immediately pressed. This is followed by fermentation at a controlled temperature of eighteen degrees Celsius. This is followed by maceration of the skins at a low temperature for twenty-four hours. Finally, the wine is aged in wooden barrels for four to five months. Muscat wine has excellent aging potential and can be kept for up to ten years. As it ages, the wine develops other aromas such as caramel, nuts, and raisins. This complex, expressive, and rich dessert wine pairs beautifully with exotic fruit desserts and blue cheeses.
