Consider a mythical 13th-century poet, a rugged coastline, and a great deal of dedication from winemakers. A strange combination, but these three factors led to the birth of the Martin Codax winery, named after a mythical poet whose wild stories are told. The Martin Codax winery is an intensive collaboration between several wine regions located in northwestern Spain, in the Rías Baixas region. Besides its excellent, unique wines, the region is unique compared to the rest of Spain. While the rest of Spain boasts sun and warmth, the climate of Rías Baixas is cool and chilly. Not pleasant for people; perfectly suited to the Albarino grape.

A wood-aged white wine from Martin Codax

Martin Codax wines are known for their pure, unaged white wine. However, this Martin Codax Albarino Organistrum has undergone oak aging, a unique characteristic of this aromatic white grape. After fermentation, the precious juice is placed in French oak barrels, where it matures for an impressive four months on its own lees (the yeast cells). After this aging, the Martin Codax Albarino Organistrum juice rests for another eight months in stainless steel. This creates an interesting, unusual combination that will delight any true wine connoisseur.
