Ayala Cuvée Perle d’Ayala Brut Millésimé 2015 is the prestige cuvée of Champagne Ayala, made exclusively from Grand Cru grapes from a single vintage. This 13th edition marks the 30th anniversary of Perle d’Ayala and was aged for over 8 years under natural cork, with manual remuage and manual dégorgement in the house cellars.
This vintage champagne comes from 5 Grand Cru villages in Champagne.
Location / Origin: The Chardonnay comes from Chouilly, Cramant, Le Mesnil-sur-Oger, and Oger in the Côte des Blancs. The Pinot Noir comes from Aÿ in the Montagne de Reims, the historic home of Ayala.
Cru selection: Perle d’Ayala 2015 is made exclusively from Grands Crus. This selection gives the wine its combination of chalky tension, aging potential, and powerful structure.
Soil: Champagne is known for its deep chalk soils, formed from ancient marine deposits. This chalk helps support freshness, minerality, and long aging.
Climate & Influences: 2015 was a dry year, with a harvest from September 7 to 23 under excellent conditions. Chardonnay developed richness and roundness, while Pinot Noir brought power and generosity.
Perle d’Ayala 2015 is crafted with a distinctly artisanal approach, focused on complexity, precision, and long development.
Fermentation: The base wines are selected by origin, ensuring that the different Grand Cru villages retain their own roles in the final blend.
Second fermentation in the bottle: After blending, the champagne undergoes a 2nd fermentation in the bottle. This creates the fine mousse, the tension, and the elegant bubble structure.
Aging under natural cork: The wine ages in the cellar for over 8 years under natural cork. What does natural cork do during aging? Natural cork allows for subtle micro-oxygenation, allowing the champagne to develop extra aromatic complexity and refinement.
Craftsmanship: Each bottle is turned by hand on traditional pupitres and manually disgorged. This artisanal method is part of the rare, small-scale nature of Perle d’Ayala.
Dosage: With a 5 g/l dosage, the style remains dry, taut, and precise, with enough roundness to support the ripe 2015 structure beautifully.
The blend combines the minerality of Chardonnay with the power of Pinot Noir from Aÿ.
80% Chardonnay – Côte des Blancs: Chardonnay gives this champagne its citrus freshness, chalky tension, refinement, and long mineral line.
20% Pinot Noir – Aÿ: Pinot Noir brings structure, depth, dried floral notes, and a subtle eucalyptus-like nuance to the blend.
