In the ideal climate with abundant sunshine and sufficient freshness, the grapes ripen beautifully. At the right ripeness, the Pinot Grigio grapes are harvested early in the morning to prevent damage to the bunches and preserve their natural freshness. Upon arrival, the light gray bunches are pressed, and the skins ripen along with them. The light gray, reddish skins impart their color and flavor to this rosé, and the Pink Pinot Grigio is born. A precise job, as the skins must be removed from the juice early on, but leave that to the winemaker at Barefoot.
