Saint Dominique Le Cabernet Sauvignon de la Chapelle 2022 Vin de Pays de l’Hérault, France
Saint Dominique Le Cabernet Sauvignon de la Chapelle 2022 is a Southern French red wine made from Cabernet Sauvignon in the Hérault region. The wine comes from Aniane, near Montpellier, where La Chapelle is known as one of the oldest wine estates in the village. Behind this wine are D. Vialard and E. Hosteins, with Danielle Vialard as an oenologist with experience in the Médoc at Château Cissac. This gives this Cabernet Sauvignon a nice link with Bordeaux, but with the riper, southern power of the Languedoc.
Vineyards and region
Le Cabernet Sauvignon de la Chapelle comes from Aniane, a village in the Hérault with a remarkable wine history.
• Location / Origin: Aniane is located near Montpellier, in the south of France. The wine falls under Vin de Pays de l'Hérault, an appellation that allows for grape varieties such as Cabernet Sauvignon.
• Village with character: Aniane gained extra renown when the municipal council, led by Manuel Diaz, prevented the American company Mondavi from developing more than 100 hectares of forest land into vineyards. This was seen as a direct victory for local wine producers.
• Estate: La Chapelle is one of the oldest wine estates in Aniane. Due to a lack of succession, the estate came into the hands of Danielle Vialard.
• Bordeaux influence: Danielle Vialard previously proved her quality as an oenologist in the Médoc at Cru Bourgeois Château Cissac. This gives this wine a clear Cabernet Sauvignon base with a classic French background.
Grape composition
This red wine is made entirely from Cabernet Sauvignon.
• Cabernet Sauvignon – Hérault: Cabernet Sauvignon gives this wine its dark fruit, firm structure, and structured finish. The grape originally comes from Bordeaux but develops a riper, fuller expression with clear notes of blackcurrant in the Hérault.
Tasting notes and serving tips
Le Cabernet Sauvignon de la Chapelle has a rich taste with clear notes of blackcurrant. The wine is full-bodied and powerful, with a structured finish that pairs well with the ripe style of Southern French Cabernet Sauvignon. The combination of dark fruit and grip makes it suitable for hearty dishes.
• Serving temperature: Serve this Cabernet Sauvignon at 16–18 °C, so that the black fruit, structure, and full flavor remain well balanced.
• Dishes: Delicious with red meat, flavorful pasta, lamb dishes, strong cheeses, and dark chocolate.
More information about La Chapelle
La Chapelle is one of the oldest wine estates in Aniane and came into the hands of Danielle Vialard due to a lack of succession. She brought experience from the Médoc, where she proved her quality as an oenologist at Château Cissac. Together with Eric Hosteins, she is behind Le Cabernet Sauvignon de la Chapelle, a wine in which the Bordeaux grape Cabernet Sauvignon receives a Southern French interpretation.
