The Syrah grapes for this juicy red wine come from the Cayenne vineyard. Its name comes from the vineyard's very poor and difficult-to-work soil. Cayenne is a prison term meaning something that's difficult to manage, even resembling slavery. It indicates that this wine isn't simply produced, but rather involves a great deal of work. The success of Domaine de Castelnau

Between Béziers and Montpellier lies the Domaine de Castelnau estate. The estate has a long history dating back to the 13th century. However, winemaker Christophe Muret and his wife have been at the helm since 1997. Over the years, they have expanded the estate from 57 hectares to 100 hectares. Currently, the focus is on Chardonnay, Viognier, Syrah, Merlot, and Cabernet Sauvignon. With their expertise and expertise, they bring exceptional wines to the market by combining this expertise with state-of-the-art production methods. The striking thing about this is that the wines are still affordable, and sustainability is a top priority. For this Syrah wine, the vines have to work hard for their nutrients, ensuring the Syrah grapes are of the highest quality, resulting in a high-quality wine. The Syrah grapes are harvested at night, when the weather is still pleasantly cool. This allows the grapes to retain their freshness during their journey to the winery. Here, the grapes are destemmed and gently crushed. A hot, temperature-controlled, prefermentation maceration follows. Traditional fermentation then takes place, after which the wine is left to rest for several months.
