This blended wine features two of the world's most famous grape varieties: Merlot and Cabernet Sauvignon. These grapes thrive in the Languedoc region and can develop wonderful characteristics. In the Domaine de Castelnau Merlot Cabernet l'Enclos, the Merlot takes on a slightly more powerful role, giving the wine a beautifully rounded and smooth finish. The Cabernet Sauvignon lends the extra bite to this red wine.

The vinification process of Domaine de Castelnau Merlot Cabernet l'Enclos

The wine is produced by the successful Domaine de Castelnau estate. They own approximately 100 hectares of vineyards in the Languedoc region. At the helm are Beatrice and Christophe Muret. They make honest and concentrated wines. Their goal is to operate sustainably and use state-of-the-art techniques to ensure the wines retain their purity and typicity. They are technically very strong, and thanks to their sophisticated production method, known as "lutte raisonée," they produce honest and concentrated wines. Domaine de Castelnau's wines are often relatively fresher, leaner, and more elegant. The grapes are carefully harvested at peak ripeness. Planted on hillsides, they benefit from clay and limestone soil. Harvesting takes place at night to keep the grapes cool and preserve their freshness and aromatic qualities. In the winery, the grapes are destemmed and crushed, after which maceration takes place. Finally, temperature-controlled fermentation takes place in stainless steel vats. After several months of rest, the wine is bottled.
