This cuvée beautifully demonstrates how Adegas Valmiñor presents a grape like Godello in an accessible, precise style, with great attention to selection and purity in the cellar. At Perfecte Wijn, this is one of those Spanish whites that excels as a refined aperitif, with a light lunch, or at the table with fresh fish dishes.

The origin lies in the northwest of Spain, where Galicia is known for white wines with tension and finesse.

  • Location / Origin: Minius comes from D.O. Monterrei, an appellation in Galicia. This places the wine in a region known for characterful white wines with freshness and clear varietal expression.
  • Vineyard & harvest: The grapes are strictly selected and harvested by hand in 20 kg crates. This meticulous approach helps to get the fruit to the cellar intact and in pristine condition.

In the cellar, everything here revolves around a pure, fresh style with maximum precision.

  • Harvest & Selection: Following the manual harvest, there is an additional selection on a sorting table, after which the grapes are destemmed and gently pressed. This keeps the foundation of the wine taut and refined.
  • Fermentation: First, there is 3–4 hours of cold maceration at 10 °C, followed by static settling and alcoholic fermentation in stainless steel at 16.5 °C. This approach preserves the pure fruit expression and gives the wine its fresh, bright character.
  • Bottle aging: After filtering and bottling, the wine rests for another 30 days in the bottle before distribution. This ensures it reaches the glass slightly more harmonious and well-rounded.
