The origin, grapes and craftsmanship behind this wine.

Consider a mythical 13th-century poet, a rugged coastline, and a great deal of dedication from winemakers. A strange combination, but these three factors led to the birth of the Martin Codax winery, named after a mythical poet whose wild stories are told. The Martin Codax winery is an intensive collaboration between several wine regions located in northwestern Spain, in the Rías Baixas region. Besides its excellent, unique wines, the region is unique compared to the rest of Spain. While the rest of Spain boasts sun and warmth, the climate of Rías Baixas is cool and chilly. Not pleasant for people; perfectly suited to the Albarino grape.

Martin Codax wines are known for their pure, unaged white wine. However, this Martin Codax Albarino Organistrum has undergone oak aging, a unique characteristic of this aromatic white grape. After fermentation, the precious juice is placed in French oak barrels, where it matures for an impressive four months on its own lees (the yeast cells). After this aging, the Martin Codax Albarino Organistrum juice rests for another eight months in stainless steel. This creates an interesting, unusual combination that will delight any true wine connoisseur.

This white wine from Martin Codax evokes a sultry August day. Soft fruit, with lush notes. The rich aromas of fresh apricots greet your nose as soon as you pour the Albarino Organistrum. A gentle touch of golden delicious and a ripe, soft pear continues the aroma. A hint of vanilla reveals the oak aging. The palate is round, elegant, robust, and full. You'll taste plenty of fruit, but also the minerality for which Albarino is renowned. Enjoy this Martin Codax Albarino Organistrum with grilled scallops or pan-fried sea bass for an unparalleled wine-food pairing.
