Carl Jung's specialty lies in the gentle removal of alcohol, while retaining as many natural wine aromas as possible.

Dealcoholization: Under a high vacuum, the alcohol evaporates at a temperature below 30 °C. The natural aromas released during this process are collected separately and added back to the wine, ensuring the grape character and bouquet remain recognizable.

Finishing: The final composition consists of 95% dealcoholized wine, supplemented with sucrose and carbon dioxide. The carbon dioxide provides the lively mousse, while approximately 40 g/L of residual sugar rounds off the fresh structure and gives the fruit extra softness.
