When the grapes reach perfect ripeness, they are harvested under the guidance of the MVSA winemaker. Harvest begins very early in the morning. Why so early? This minimizes the risk of damage to the bunches, allowing the grapes to retain their natural freshness. This freshness is also necessary to bring sufficient excitement to this rosé Cava. And there certainly is, and it's no wonder this Cava is inspired by five muses: one who loves poetry and dance. But also one who is full of passion, a goddess of femininity, and of course, a muse who's always up for a party.
Once the blend is made with the two grape varieties, the bottle is placed in the MVSA cellar. The bottles are aged with sugar and yeast, creating natural bubbles. This technique is called the Methode Traditionelle and is similar to that used for French Champagne. The rosé Cava gradually develops body and structure, and after a few months, we can begin to enjoy this bottle.
What an exquisite cava! It has a very fine mousse (bubbles) and beautiful, wholesome flavors. The aroma reveals a ripe bouquet of strawberry, raspberry, citrus peel, and a hint of red berry. The palate is truly beautiful, soft and refreshing with abundant ripe red fruit and citrus flavors. In short, a truly classy Rosé Cava, and for this price point, this MVSA is even outstanding.
