Once the grapes reach perfect ripeness, they are harvested carefully and with the utmost precision. Early in the morning, they are brought in and each is fermented separately, to be blended later. A task we can leave to MVSA's winemaker, who has a wealth of experience. The bottles are filled with yeast and sugar and aged for at least twenty months in MVSA's magnificent cellars. He has plenty of time to develop and build its bubbles. The mousse, or bubbles, are very soft and elegant, and that is the hallmark of this MVSA Brut Reserva.
Upon opening the bottle, we immediately smell an overwhelming aroma of white fruit, roasted toast, almonds, and a hint of spring blossom. Pouring this top-quality cava reveals a deep yellow color with a faint green shimmer. But what's even more striking are the tiny, delicate bubbles that fill the glass. Nosing the glass, we encounter a deep aroma of apricots, peaches, and a hint of freshly baked bread. The palate is superb, very full and creamy with rich flavors of white fruit, vanilla, toast, and roasted nuts. Truly a Reserva quality, unique!
