The proximity of the Mediterranean Sea and the alternation between coast and hills define the viticultural landscape.

Location / origin: The grapes come from Penedès, in the Spanish region of Catalonia. This wine region is located between Barcelona and Tarragona and stretches from the coast to the higher inland areas.

Climate & influences: Penedès has a Mediterranean climate with warm summers. The sea moderates temperatures in coastal areas, while higher-altitude vineyards experience greater differences between day and night temperatures.

Soil: The region features many limestone-rich soils, including clay, marl, and gravel. The composition varies by sub-region and influences how much water the soil retains and drains.
Traditional production gives Palau its fine mousse and subtle yeasty character.

Fermentation: After blending the base wine, a second fermentation takes place in the bottle. The resulting carbon dioxide remains dissolved in the wine, creating the bubbles when poured.

Bottle aging: The Cava ages for approximately 9–12 months in contact with the yeast cells. This yeast contact provides extra roundness and light bread-like aromas.
Palau relies on the classic combination of 3 Catalan Cava grapes.
