The old Sauvignon Blanc vineyard for the 21 Gables

This 21 Gables from Spier is made with Sauvignon Blanc. While not a typical South African grape, it thrives in Spier's vineyards, as evidenced by the Spier Signature Sauvignon Blanc. The Sauvignon Blanc grapes are harvested early in the morning in crates of no more than 10 kilos. This minimizes crushing, preserving the best juice for the wine. After fermentation, the 21 Gables Sauvignon Blanc is aged on its own lees for another six months. This gives the wine more power, flavor, and robustness.
