The vinification process of Jordan Cold Fact Sauvignon Blanc
Since 1993, Gary and Kathy Jordan have been crafting high-quality wines at their flagship estate. The winery's history dates back over 300 years. Gary's parents purchased the 164-hectare estate in Stellenbosch in 1982. They specialize in classic grape varieties suited to the diverse soils and locations. The estate's unique slopes face northeast and west, with vineyards at varying elevations. The grapes benefit from the proximity of the Indian and Atlantic Oceans, creating a perfect climate for optimal ripening. The Sauvignon Blanc grapes are harvested at varying degrees of ripeness, adding fruit complexity to the wine. Upon arrival at the winery, the grapes are immediately deseeded. Maceration then takes place, during which the skins remain in contact with the must for six hours. This enhances the aromas. The grapes are then gently pressed, and the juice is transferred to the fermentation tank. Fermentation takes place with selected yeasts. Each plot is fermented separately at a controlled temperature between 12 and 16 degrees Celsius.The refreshing Jordan Cold Fact Sauvignon Blanc
