A beautiful winery bearing the Spanish name Si. A family winery that produces 100% organic wines, it's located in one of Spain's most famous wine regions, Iniesta in Castilla-La Mancha. The climate here is perfect for Macabeo and Sauvignon Blanc grapes, thanks to the region's cool climate. This coolness is partly due to the influence of the Mediterranean Sea, as the vineyards are constantly receiving a strong breeze. The difference between day and night temperatures is also very high, allowing the grapes to cool significantly at night, resulting in a pure and clean harvest.

The harvest of the white Si wine

Once the sun has had its moment, the grapes are perfectly ripe around September. Harvesting begins early in the morning to prevent oxidation and bruising during transport. The Macabeo and Sauvignon Blanc also retain their natural freshness, which you can taste in the flavors. All bunches are thoroughly inspected upon arrival at the bodega, ensuring only the best are used in the wine. The white wine is aged in steel vats in Si's cellars to preserve its freshness, and we certainly notice this.

The aroma and taste of the Si Macabeo Sauvignon Blanc

As soon as the bottle is opened, we smell the pure and clean aroma of both grapes. A vibrant bouquet of tropical fruit, lime, and a touch of grapefruit. Upon pouring, we see a bright color with a green shimmer, releasing all the aromas. With our noses over the glass, we detect various fruity notes of green apple, lime, grapefruit, and, of course, plenty of tropical fruit. On the palate, this white wine has a slight tingle on the tongue, releasing abundant fruit. The fresh attack awakens all our senses and leaves a thirst-quenching feeling. The finish is rich with white and citrus fruit.
