A beautiful Albariño from the Spanish Rías Baixas. A balanced wine produced by winemakers Eric Paul Sanders and Jose Estevez with the goal of creating something special and untraditional in a traditional way. And that resulted in this Eivi. A wine with more intensity and complexity than you would expect from an Albarino.

The Embraced Wine Eivi

Eivi is one of the finest wineries in Rías Baixas. This region received DO recognition in 1988. It is located in the far northwest of the Iberian Peninsula, on the Atlantic Ocean. Spanish winemakers Eric-Paul Sanders and Jose Estevez are the brains behind the celebrated Eivi wine. The Albarino grapes for Eivi grow in specially selected vineyards in Riax Baixas, Spain, influenced by the sea. The conditions are ideal for this grape variety, with the soil structure and excellent climate ensuring perfect ripening. At peak ripeness, the grapes are harvested entirely by hand. At the winery, a strict selection process is carried out by hand in small crates to prevent damage to the grapes. The wine is aged for three months on lees, followed by a further six months in bottle.
