South Australia has 18 recognized grape growing regions. These regions are geographically designated by specific regional boundaries. Yalumba operates in ten of these regions: Adelaide Hills, Adelaide Plains, Coonawarra, Barossa, Langhorne Creek, McLaren Vale, Murray Darling, Riverland, and Wrattonbully. Each region has distinct soil types and local geographic influences, such as altitude and cooling sea breezes. This allows Yalumba to produce a wide variety of wines.
After harvest, the Viognier grapes are gently pressed, and the juices are treated with controlled oxidation. Fermentation takes place in stainless steel tanks using naturally occurring indigenous vineyard yeasts. These yeasts create layers of flavor, complexity, and richness. After fermentation, the wine remains on lees for three months, adding creaminess and palate refinement.
The label of this Viognier depicts vine cuttings. These vines represent the beginnings of a new vineyard, planted after careful sorting, grafting, and bundling. This seductive wine has a beautiful bouquet of apricot, lemon, and lychee on the nose. The vines are grown on the southern coast of Australia, where the grapes receive ample sunshine and a fresh breeze, ensuring perfect balance. The structure is oily and rich, with lovely flavors of yellow fruit, vanilla, and a hint of lime. Yalumba Viognier is beautifully balanced with a subtle bitterness. Delicious!
