Jean-Claude Mas, who has been at the helm of this beautiful French winery since 2000, found the ideal spot. The hillsides offered the perfect balance of sunlight and coolness for this Viognier. The vineyard's climate is perfect: sunshine, the right coolness, and the rich soil structure contribute to a top-notch harvest. Once ripe, the Viognier is harvested partly by hand and partly by machine. Once all the grapes are brought to Paul Mas, they are thoroughly inspected on sorting tables. Only the finest juice is prepared for partial oak aging. This gives this white Paul Mas Viognier a touch more depth and power.
