The wine comes from the family estate in Gondrin, in the heart of the hilly landscape of the Gers.
- Location / Origin: Domaine Guillaman is situated at an altitude of 170 m in the Côtes de Gascogne. The now 200 hectares of vineyards are located within a 5 km radius of the original family property.
- Soil: The vines take root in clay-rich soil over a limestone subsoil. The clay retains water and nutrients, while the limestone bedrock provides drainage and ensures steady development of the vines.
- Climate & Influences: The vineyards lie between oceanic and Pyrenean climatic influences. Warm, sunny summer days and significantly cooler nights extend the ripening period and help build fresh acidity and pronounced aromas.
- Vineyard management: The estate is certified as Haute Valeur Environnementale level 3. Pruned canes are incorporated into the vineyard as organic fertilizer, while cover crops, mechanical soil cultivation, and annually sown field beans support soil structure and biodiversity.
Cool and protected processing is entirely focused on preserving the exuberant fruit aromas.
- Harvest & Selection: The grapes are harvested at night so that they arrive in the cellar cool and with their natural freshness intact.
- Fermentation: After pressing under inert gas, the juice undergoes cold skin-contact maceration, where extra aroma is extracted from the grape solids. The subsequent temperature-controlled fermentation keeps the citrus and exotic fruit notes clear and precise.
- Aging / Maturation: After fermentation, the wine is cold-stabilized and stored in tanks at 6 °C until bottling. This cool maturation protects the primary fruit and the lively acidity structure.
The classic white Gascony blend combines the expressiveness of Colombard with extra roundness and refinement.
- 80% Colombard – Côtes de Gascogne: Colombard forms the aromatic foundation and provides lively freshness, citrus, and exotic fruit such as grapefruit, passion fruit, and pineapple.
- 20% Sauvignon Blanc – Côtes de Gascogne: Sauvignon Blanc gives the blend extra elegance, expressiveness, and substance, which beautifully rounds out the exuberant character of the Colombard.
