The vineyards for this white wine are planted in the Fossalta di Piave region, where the old vineyard is called "Le Ronche." This name comes from the location of the vineyard. It's a unique part of Italy because the soil is very rich, with plenty of limestone, white clay, and some minerals. All of this translates to the grapes, as this white Venis is rich and minerally. In the vineyards, the harvest is pruned back because the winemakers at De Stefani want a strong harvest. And they certainly succeeded! At ideal ripeness, relatively early in the season, when the grapes still have some nice, refined acidity, they are harvested by hand.
Its rich aroma and flavor are achieved through a combination of aging. The Sauvignon Blanc is aged on its lees in steel barrels, and the Chardonnay in oak. This unique blend gives this white wine both the powerful notes of the Chardonnay and the freshness and acidity of the Sauvignon Blanc. A bold choice by the winemakers at De Stefani, but the result is stunning. The aroma reveals delicious hints of tropical fruits like pineapple, peach, and mango. There are also notes of citrus fruit and a subtle mineral undertone. The palate is overwhelming. Just like Venice, there are always new impressions as you turn a corner. Full and creamy, with hints of almond, citrus fruit, and a delicate mineral finish. We thought it was a city break in a bottle!
