After the hand-harvest, only the juice from the first pressing is used. After fermentation in tank, a process follows that makes this Pouilly Fumé so special. The wine rests on the lees for three to six months, after which the different wines are blended and collectively aged for another eight to ten months on the lees. This winemaking method, along with the unique soil and the perfect vines, gives this royal wine an elegant, rich, and aromatic character.
