This blend is composed of 85 percent Sangiovese and 15 percent Mammolo, resulting in a harmonious combination of varietals. The grapes are hand-harvested and then subjected to destemming and gentle pressing to release the juice. Fermentation takes place in steel vats filled to no more than two-thirds of their capacity. Indigenous yeasts are used, which enhances the natural expression of the grapes and the terroir. Fermentation lasts approximately one week and is carried out at controlled temperatures of 27 to 30 degrees Celsius. After fermentation, the wine is aged for several months in tempered concrete vats. These vats provide an ideal environment for the wine to mature, further developing its characteristics and complexity.
