Vineyards and region
The grapes for Angelo Primo Nero di Troia 2022 come from Puglia, Italy, from vineyards in the Agro di Cerignola district in the northeast of the region. The heart of the wine is the oldest vineyard, planted by the grandparents of the current generation in the 1980s, originally as a pergola and now pruned with a modern pruning method, allowing the plants to ripen optimally in the warm, sunny climate. The soil is calcareous and clayey, ensuring good water retention while simultaneously providing adequate drainage, a combination that gives Nero di Troia strength, color, and a distinct mineral undertone. Puglia's Mediterranean climate, with hot summers, mild winters, and abundant sunshine, is tempered by the proximity of the Adriatic Sea, allowing the grapes to arrive fully ripe in early October without losing their natural acidity. Cantine Paradiso uses cordone speronato, a horizontal pruning method in which the branches are guided along a wire, ensuring the grape clusters are well-aerated and ripen evenly.
Vinification and maturation
After the manual harvest in early October, the bunches are completely destemmed and gently crushed in the cellar, after which the must is left to macerate for 10 to 15 days in stainless steel tanks at a controlled temperature below 27°C. During this period, color, aroma, and tannins are gradually extracted from the skins without the wine becoming bitter or harsh. After alcoholic fermentation, the young wine remains in stainless steel for approximately two months to clarify and stabilize before being transferred to oak barrels. Angelo Primo is then aged in oak for 12 months, giving the wine additional structure, notes of cocoa and coffee, and a fuller texture. After barrel aging, the wine is bottle-aged at the estate for approximately four months, allowing the fruit, oak, and tannins to meld beautifully before release. With an alcohol content of 15%, this is a serious, full-bodied red wine, but thanks to the combination of ripe tannins and a supple, sultry structure, it remains surprisingly drinkable.
