Villa Emilio Cuvée des Hospitaliers Saint-Chinian is a full-bodied, robust red wine for dinners with grilled meat, spicy dishes, and moments when you want more body and southern warmth in your glass. The wine bears a name strongly connected to the estate itself, as Villa Emilio refers to the old Roman villa to which these lands once belonged, while the reference to the Hospitaliers harks back to the medieval history of the estate as a resting place on the route to Compostela. This also makes the appellation relevant. What is Saint-Chinian? It's an AOP in the Languedoc, spread across 20 villages, with a clear division between schist in the northwest and calcareous soils in the southeast.
Vineyards and region
Its origin immediately gives this wine more character than a simple Southern French red wine.
- Location / Origin: The estate is located just north of Puisserguier, northwest of Béziers, within the Saint-Chinian appellation. This places the wine in a hilly part of the Languedoc where altitude, wind, and relief have a significant influence on its style.
- Altitude: The vineyards are situated between 88 and 205 m in altitude. This doesn't result in extreme coolness, but it does create enough variation within the estate to build tension and balance in the fruit.
- Climate & Influences: The estate is in a very windy area, which allows for large temperature differences and ensures that grapes dry quickly after rain. This helps to bring in healthy and clean fruit.
- Landscape: The plots are nestled among garrigue, olive trees, and brambles, in a distinctly Mediterranean landscape that nicely complements the southern character of Saint-Chinian.
Vinification and ageing
The cellar approach here remains consciously classic and pure, so that fruit and suppleness remain central.
- Fermentation: The vinification is traditional, with long macerations. This gives the wine sufficient colour, body, and structure to support its robust style.
- Ageing / Oak maturation: No oak ageing is used. As a result, the wine remains primarily built on fruit, spiciness, and direct southern charm.
Grape composition
The blend is well-suited to Saint-Chinian and focuses primarily on body, colour, and southern spiciness.
- Syrah – Saint-Chinian: Syrah gives the wine extra depth, dark colour, and a firmer backbone.
- Grenache – Saint-Chinian: Grenache brings roundness, warmth, and a juicier mouthfeel to the blend.
- Cinsault – Saint-Chinian: Cinsault provides suppleness and a softer, friendlier texture.
- Mourvèdre – Saint-Chinian: Mourvèdre enhances the Mediterranean character of the wine and adds extra firmness to the finish.
Tasting notes and serving tips
Deep red in the glass, with a subtle nose of red fruit and a clear southern, spicy undertone. On the palate, this Saint-Chinian is full and firmly structured, with beautiful balance, sufficient body, and a friendly, smooth drinkability. The finish lingers long and is best enjoyed with a meal.
- Serving temperature: 19 °C works well here, as this wine then fully opens up its body, spiciness, and round structure.
- Dishes: Grilled meat, steak, grilled sausages, and spicy dinner dishes pair very naturally with this wine, as it has sufficient power and suppleness for savoury flavours.

Château Milhau Lacugue is an ancient estate with Roman roots that was in the hands of the Order of the Hospitaliers during the Middle Ages. After the French Revolution, the property was fragmented until the Lacugue family reassembled it from 1969 onwards and further developed it into the current wine estate. This long history gives this wine an extra dimension, precisely because the names Villa Emilio and Hospitaliers are still directly linked to this place.
