For this white wine from Guillaume, we have to travel to the warm south of France, to the Pays d'Oc wine region. There, Guillaume's vineyards bask in the intense sunshine. Thanks to their perfect exposure to the sun, the grapes ripen beautifully. The result is full clusters bursting with fruit. But the wind also plays a role, as it is precisely the wind that cools the Chardonnay grapes. This coolness is necessary to give this white wine a natural freshness and to allow the aging process to proceed smoothly.

When the full bunches of Chardonnay grapes reach their perfect ripeness, they are harvested in the early morning. Because when the grapes are cool and dormant, there's minimal risk of bruising during transport. Once the Chardonnay grapes arrive at Guillaume's, they undergo a rigorous selection process. Only the finest bunches are used in this white wine. The golden juice is fantastic and renowned throughout the Pays d'Oc region.
