Gérard Bertrand Domaine de L'Aigle Chardonnay Bio

Domaine de L'Aigle is a unique wine estate owned by Gérard Bertrand, situated in the foothills of the Pyrenees, near Limoux. This organic Chardonnay reveals its most refined side, with influences from high-altitude terroir and a particularly cool climate. The result is a wine that effortlessly bridges the gap between the elegance of Burgundy and the expressiveness of the Languedoc.

Vineyards and region – fresh mountain climate at high altitude

The Domaine de L'Aigle vineyards are situated at an altitude of 300 to 500 meters in the western part of the Languedoc region. This cooler microclimate, combined with the chalky and clay-rich soils, allows the grapes to ripen slowly. As a result, the wine retains its fresh acidity and develops refined aromas atypical of the South of France.

Vinification and maturation – at the intersection of tradition and precision

The grapes are harvested at night to prevent oxidation and pressed immediately. Fermentation takes place at controlled temperatures in barrels made partly of stainless steel and partly of French oak. Some of the wine undergoes malolactic fermentation and is aged on the lees for several months, which contributes to its complexity, creaminess, and length.

Tasting notes

The nose reveals aromas of citrus, white peach, roasted hazelnut, and a subtle hint of vanilla. The palate is both rich and fresh, with a creamy texture, vibrant acidity, and an elegant, slightly mineral finish.

Serving suggestions

Ideal with grilled sea bass, lobster, creamy pasta, or poultry. Serve at 10 to 12 degrees Celsius for an optimal balance of wood, fruit, and freshness.
