Sustainable winegrowing at Domaine de Castelnau

Domaine de Castelnau is located just 4 kilometers from the historic town of Pézenas, near the Thau Basin. The domaine's history dates back to the 13th century. In 1997, Christophe Muret, together with his wife Beatrice, purchased the 57-hectare estate and expanded it to 100 hectares, where Chardonnay, Viognier, Syrah, Merlot, and Cabernet Sauvignon are the main grape varieties. With his highly talented winemaking skills, Muret vinifies the essence of the grapes from each varietal. He utilizes both the most advanced technologies and traditional methods for this vinification, prioritizing sustainability and respect for the environment. The grapes are harvested mechanically in the cool of the night. This preserves their freshness. At the winery, the grapes are immediately lightly crushed and then gently pressed. The juice undergoes temperature-controlled fermentation in stainless steel tanks. Afterward, the wine is aged on the fine lees, preserving the Chardonnay's delicious fruitiness.
