When the grapes reach peak ripeness, the Pasqua family begins the harvest. Transporting the grapes to the press takes 11 minutes. After careful selection, the grapes are pressed, which also takes 11 minutes. Furthermore, the skins are fermented for just 11 minutes, giving this rosé its delicate pink hue.
