This white wine is made from Albillo grapes, a rare indigenous grape variety. The grapes are grown in the Bocigas vineyard in the Spanish province of Burgos. At an altitude of 1,000 meters above sea level, this location enjoys an extreme climate. Daytime temperatures are high, while nights can be quite cool. These fluctuations promote the slow ripening process and thus the ideal aromatic qualities of the grape. The sandy, calcareous soils with clay contribute to the concentration and unique character of the grapes. The grapes are hand-picked and then undergo a process where they are frozen for 24 hours. This freezing is selective and affects only the grape skins, causing them to crack slightly and release their natural fruit aromas as fermentation begins. Before fermentation begins, the grapes undergo a cold maceration process to optimize the extraction of aromas and flavors. The gently pressed must is then transferred to stainless steel tanks to begin fermentation. This fermentation takes place at low temperatures and utilizes wild yeasts from the vineyards themselves, creating the highest possible terroir effect.
