Pure, clean, and fresh—these are the magic words for this white Casa Silva Sauvignon Blanc. Casa Silva has vineyards filled with Sauvignon Blanc in the Colchagua wine region. These vineyards are known for producing fresh and especially ripe grapes, and that's absolutely true. The old vines, some 30 years old, are deeply rooted and can absorb a lot of moisture. This is necessary, as the warm region is often dry, but the Sauvignon Blanc can handle it. The warm, sunny summers give the grapes a high sugar content, resulting in a vibrant white wine.

Fifth generation of the Casa Silva family

The grapes for this Sauvignon Blanc come from Angostura, Lolol, and Paredones. The blend of these different vineyards produces a typically crisp white wine. Production is in the hands of Mario Pablo Silva, now the fifth generation to run the family business. The winery was founded in 1892 by the French wine family Bouchon. The Chilean trend was to place more emphasis on terroir when planting vineyards, and Casa Silva has followed suit in recent years. This shift has further enhanced the quality of Casa Silva wines.

The harvest of the Casa Silva Sauvignon Blanc

Bringing in the harvest is a skilled craft and must be done quickly and directly. Harvesting begins in the morning while the grapes are still dormant, and they are transported in small crates to the press in the cool weather. After pressing, the wine is aged for several weeks in steel barrels to preserve its freshness. And that's exactly what happens: as soon as the cap pops open, you smell a vibrant aroma of green apple, a mix of tropical fruit, and a hint of green, peach, and pear. The taste is pure and wonderfully fresh, thanks to the fruity nuances of passion fruit, lime, and gooseberry. On the back of the tongue, we also detected nuances of fresh mint leaves and other green herbs in this Casa Silva. What a delightful, refreshing white wine for every day.
