The grapes are carefully harvested by hand from old vineyards and transported to the winery in plastic containers to prevent damage and oxidation, thus preserving their freshness. Only the lightest juice from the pressing is used, known as the "flower" must for its aromatic and delicate qualities. The dominant grape in Reserva Heredad is Macabeo, which contributes to the wine's acidity, freshness, and ability to age for 24 months or more on the lees.
