Once the grapes are pressed, the winemaker creates the blend, a meticulous job requiring meticulous care. They strive to ensure the Cava shines, using a second fermentation in the bottle, just like the well-known Champagne. This gives this Rigol Brut Cava a very fine mousse (bubbles). The aging period is somewhat shorter than that of its older siblings, approximately ten to twelve months for this Rigol Brut Cava in the cellar.
With the "brut" classification, we know we're dealing with a slightly dry Cava. The fun begins the moment you open the bottle. The aroma reveals a beautiful bouquet of white fruit like apple, pear, and melon. The palate offers a very fine, soft mousse, ripe hints of white peach, lime, and stone fruit. There's also some fresh mint, freshly baked bread, and roasted nuts. In short, a top-notch Cava, and for this price, we find it truly unbelievable.
