Nodus Cava Brut Nature DO Valencia

A classy organic cava: Nodus Cava Brut Nature is made from Chardonnay and Macabeo grapes and aged on the lees for at least 24 months. This sparkling wine from the DO Valencia is completely dry (1.6 g/L residual sugar) and is characterized by its fine mousse, fresh acidity, and layered aromas of citrus and brioche. Thanks to the traditional method and manual disgorgement, this is a refined cava with remarkable depth.

Vineyards and region

The grapes come from Finca El Renegado, an organically certified estate in Caudete de las Fuentes, in the western part of the Valencia region. The vineyards are situated on chalky soil at an altitude of approximately 600 meters. The Mediterranean influence ensures cool nights, allowing the grapes to retain their freshness and maintain a well-balanced acidity.

Vinification and maturation

This cava is made using the traditional method, with a second fermentation in the bottle. The wine then ages on its lees for at least 24 months, giving it complexity and refinement. Disgorgement is carried out entirely by hand. No sugar is added during dosage, ensuring this Brut Nature is completely dry and relies purely on its fruit, acidity, and structure.

Grape composition

Chardonnay and Macabeo – a classic blend where the Chardonnay provides tension and finesse, and Macabeo provides citrus fruit and softness.

Tasting notes and serving suggestions

Pale yellow with fine bubbles. The aroma opens with green apple, citrus, almond, and a hint of brioche. The palate is fresh, taut, and dry, with lively acidity and an elegant mousse. The finish is clean and refreshing.

Pairs well with: seafood, sushi, tapas or as an aperitif.
