Thanks to its fine character, this Brut wine is wonderfully thirst-quenching and very accessible. The bubbles add to the festive atmosphere, and the refreshing character makes it a perfect pairing.

The sparkling wines of Bailly Lapierre

What began as individual wineries merged to form a cooperative. Since 2015, Les Caves Bailly Lapierre and Les Vignerons de Buxy have been working together and are now a partnership of 430 winemakers. Near the border of Burgundy, we find the Bailly Lapierre winery in the town of Auxerrois. This winery continues to produce refreshing wines in a unique way. In recent years, they have been producing sparkling wines that are beloved worldwide and offer a fine alternative to the more expensive wines from the Champagne region. Generally, Chardonnay and Pinot Noir grapes are used in the blend, with the local Aligote grape adding a touch of local flavor. A blend of four different grape varieties: Pinot Noir, Chardonnay, Gamay, and Aligote. The grapes are harvested entirely by hand, allowing for a rigorous selection process in the vineyards themselves. The grapes are quickly transported in bins to the winery. They are then pressed and undergo malolactic fermentation. Now that the base wine has been made, a second fermentation takes place in the bottle. This takes about twelve months, during which the fine bubbles develop.

The aroma and taste of Bailly Lapierre Reserve Brut

And this fine fizz is immediately apparent in the glass. We can savor aromas of citrus and yellow fruit. It's an accessible wine that's deliciously juicy and creamy. It has a fine body and therefore pairs well with heavier dishes.
