At ACALA, the Italian spritz is given a surprising foundation of fermented tea. The result is a vibrant, non-alcoholic aperitif in which carefully layered tea aromas and refined herbal bitters come together beautifully: expressive, complex, and with a recognizable bittersweet character.

This organic, vegan sparkling tea is made in Lithuania, using a combination of local ingredients and Spanish citrus.

  • Spring water: Spring water from Druskininkai forms the base for the drink and the brewing of the tea.

  • Tea and flowers: Hibiscus and rosebay willowherb, also known as fireweed, form the botanical tea base.

  • Orange and herbal bitter: Spanish orange juice is combined with a Lithuanian herbal bitter made from wormwood and marigold. This combination gives Spritz Style its distinct aperitif character.

  • Spices: Cinnamon, anise, ginger, cardamom, cloves, black pepper, and fennel seed complete the aromatic composition.

Fermentation, careful blending, and bottle aging form the core of ACALA’s method.

  • Tea preparation and fermentation: The tea is brewed with spring water over an open fire and then fermented. This creates the foundation for the layered style of the sparkling teas.

  • Assembly: Aged, fermented tea is brought together with freshly brewed tea, juices, flowers, herbs, and spices. Precisely tuning these components gives the drink its cohesion and aromatic refinement.

  • Finishing and bottle aging: Added carbonation provides the sparkle. After bottling, the drink is aged in a cool, dark cellar, where the various flavor components can continue to meld.

Behind ACALA is sommelier Martynas Žemavičius, who spent 20 years in London working with fine wines and champagne. His search for non-alcoholic drinks with the same attention to taste and presentation grew into his own brand, which focuses on gastronomy and natural ingredients. This creative approach is also reflected on the bottle: the label for Spritz Style features the artwork She is Magical No.01 by artist GIA RAM.
