Stellenbosch is an officially demarcated district within the South African Wine of Origin system. It falls under the Coastal Region, the official wine region surrounding the southwestern Cape. A wine with WO Stellenbosch must be made entirely from grapes grown in this district; the dossier therefore concerns the wine's origin, not the administrative municipality or the broader Cape Winelands administrative district.[1]

Where is the Stellenbosch wine region located?

The district is located in the southwestern Cape, east of Cape Town and close to False Bay. Mountains and ridges surround the area, while the valley of the Eerste River cuts through the landscape. The district researched for wine with protected origin is located around 34° south latitude and 19° east longitude and covers 84,537 hectares, including land unsuitable for agriculture.[2]

Which official sub-regions belong to Stellenbosch?

The current official classification includes eight wards, or demarcated sub-regions: Banghoek, Bottelary, Devon Valley, Jonkershoek Valley, Papegaaiberg, Polkadraai Hills, Simonsberg-Stellenbosch, and Vlottenburg.[3] A ward is a smaller, officially demarcated area of origin within the district. Not every Stellenbosch wine therefore bears the name of a ward on its label.

Why do soil and climate vary so greatly?

Mountains, valleys, and sea air

The landscape runs from approximately 5 meters on the coastal plain to over 1,500 meters in the Hottentots-Holland Mountains. The Simonsberg, Stellenboschberg, Jonkershoekberg, Helderberg, and Bottelaryberg mountains provide many different slope orientations. Due to the proximity to the ocean, differences in altitude, and local winds, the climate varies significantly within a relatively small area.[4]

Granite, sandstone, and shale

The subsoil is geologically complex. Weathered granite, sandstone, and shale appear in various places, alongside younger deposits in valleys and lower-lying areas. Altitude, slope orientation, and drainage help determine how soils develop locally.[5]

Which grapes and wine styles are characteristic?

As of December 31, 2024, the statistical wine region of Stellenbosch comprised 11,653 hectares of planted wine grapes. In the same year, there were 304 primary grape producers; that category only includes producers who actually produced grapes in 2024.[6]

Stellenbosch is best known for red wine and Bordeaux-style blends, with Cabernet Sauvignon as an important grape. Merlot, Syrah, and the South African Pinotage are also very common. For white wines, Chenin Blanc, Sauvignon Blanc, and Chardonnay, among others, play a leading role.[7]

Measured as a share of the 11,653 hectares of planted vineyard surface, Cabernet Sauvignon (19.7%), Sauvignon Blanc (13.0%), Merlot (12.1%), Shiraz (11.6%), and Chenin Blanc (10.8%) were the five largest varieties in 2024. The percentages are calculated from the reported hectares per variety and rounded to one decimal place.[8]

Of that same total vineyard surface, 64.1% was planted with red wine grapes and 35.9% with white wine grapes at the end of 2024.[9]

The origin name alone does not predict a fixed taste. A vineyard on a cool, windy slope may yield a different profile than a sheltered spot on warmer soils. Grape selection, harvest time, and winemaking therefore remain important.

How do you read WO Stellenbosch on the label?

The official designation Wine of Origin Stellenbosch refers to the origin of the grapes. The South African system was officially introduced in 1973; Stellenbosch holds the status of a district within it. Stellenbosch is more specific than the overarching Coastal Region and, in turn, includes individual wards, the official sub-regions. If you see, for example, Simonsberg-Stellenbosch, it concerns such a demarcated sub-region within the district.[10][11]

What makes the local context recognizable?

The historic town, university, mountain landscapes, and viticulture are closely intertwined. This makes Stellenbosch a place name, a knowledge hub, and a wine origin all at once. For any bottle, the mention of Wine of Origin remains the reliable indicator for geographical demarcation.[12]
