2023 was an excellent year for the development of Botrytis in Wrattonbully, which enabled the creation of this complex dessert wine. This wine is only produced in exceptionally good years, underlining the quality of this vintage.
Yalumba is a leading winery located in the phenomenal Australian landscape. Although Australian wines are considered New World, winemaking has been part of the culture here for over a century and a half. Yalumba was founded in 1849, meaning they have been active in Australia for over 170 years. Yalumba's home base is Angeston, a small town just an hour's drive from Adelaide, the capital of South Australia.

This Yalumba FSW8B Botrytis Viognier is a beautiful masterpiece from the winemakers of Yalumba. The grape is the exceptional Viognier. This grape originates in France but has since spread throughout the world. The vineyards for this dessert wine are located in Wrattonbully, a renowned appellation in the far southeast of South Australia, literally on the border with Victoria.

The process of creating this successful dessert wine is very complex. Yalumba FSW8B Botrytis Viognier is created by noble rot, also known as botrytis, occurring in the grape clusters. The grapes dry out, increasing their sugar content. This gives the dessert wine a natural sweetness. However, this process is very complex, and the wines are therefore in limited supply. This wine is only produced in exceptionally good years. However, in those years, you do get a rich bouquet of blossoms, dried apricots, and delicate honey. The flavor is full, powerful, and deliciously sweet, perfect with this. You'll taste kumquats and tropical fruit. A hint of honey lingers pleasantly on the back of the tongue.
